LEMON, CARDAMOM AND HAZELNUTS BISCUITS mark the beginning of a “new season”.

This month everything is new. Good intentions like “… soon I sign up in the gym!” They reopen schools, temperatures drop and you want to turn on the ovens again.

After a summer to “bivouate” between a sunny beach, a spritz in the company of sunset, a short motorbike holiday, we all want to “start over”!

Restart the diet left in June, start with the projects left in the middle, but above all begin again to prepare new recipes …

September is for many the month of good intentions, those who want to get involved, those who do not give up and do not get discouraged pursuing their dreams …

These LEMON, CARDAMOM AND HAZELNUTS BISCUITS I dedicate them to all those who, like me, never disagree with all those who are strongly related to traditions, family and territory, but who with curious eyes want to experiment and taste new flavors …

LEMON, CARDAMOM AND HAZELNUTS BISCUITS

 

INGREDIENTS FOR 40 BISCUITS:

  • 300 g of semi whole wheat flour (I use the flour of Ancient Molino Santa Chiara),
  • 100 g of sugar,
  • 100 g of cow’s ricotta,
  • 70 g of butter,
  • 30 g of honey,
  • 1 egg,
  • the grated juice and grated lemon of a lemon,
  • 10 g of instant yeast for sweets,
  • a pinch of salt,
  • 3 g of cardamom powder,
  • 30 g of hazelnut grain,
  • velvet sugar q.b.

 

METHOD :

Work soft butter with sugar and honey.

Combine egg, ricotta, juice and lemon zest. Add flour, yeast, cardamom, hazelnuts and a pinch of salt slowly.

Mix the ingredients with the help of a wooden spoon until you get a soft and homogeneous bouquet.

Wrap with the food film and put in the fridge for at least an hour. Take back the mixture and form a lot of balls of about 20 grams each, pour it into the icing sugar and place them on an oven-baked pan.

Bake oven at 180 ° C for about 10 minutes, lower the temperature to 160 ° C and cook for another 10/15 minutes.

Sprinkle and cool on a cake grater.

Tips and Triks: Cookies if stored in a hermetic box will keep their softness for days. They are very good to enjoy with lemon tea.
