Cold outside, hot inside! A LEGUME SOUP that warms the heart even before the belly!
Like today, the cold has the best, frozen wind and gray clouds! One of those days when you would like to be alone under the covers, in front of a fireplace lit to read a good book or simply let go to the sweet doing nothing!
But you can not: the hectic day awaits us! And so how do you wake up to how it gets dark, you run after a thousand things to do, work, children, shopping and then take the children in the pool and help them to do their homework and …… ok! We understood each other!
But at least at the table let’s take our time to savor something that pampers the spirit, it is no coincidence that the SOAPS are dishes COMFORT FOOD par excellence!
After a day spent chasing after a thousand commitments, let’s give us this LEGUME SOUP as good as those that our grandmothers used to prepare!
INGREDIENTS FOR 4 PEOPLE :
- 250 g mixed mixed pulses (borlotti beans, cannellini beans, eyed beans, Castelluccio lentils, decorticated lentils, black Beluga lentils, split peas, broad beans, peeled broad beans, soy),
- 80 g of spelled,
- extra virgin olive oil,
- a carrot,
- a celery coast,
- an onion,
- a bunch of sage,
- a bunch of rosemary,
- 2 tablespoons of tomato paste,
- Salt and Pepper To Taste,
- vegetable broth.
Clean the carrot, celery and onion and cut everything finely. In a saucepan heat a few tablespoons of olive oil and add the chopped mixture.
Add sage and rosemary and brown over low heat. Add the mix of dried vegetables that you have previously left to soak for at least 8 hours and spelled.
Cover with vegetable stock and cook over a low heat. Every now and then stir with a wooden spoon and add more broth if necessary. About halfway through cooking add the 2 tablespoons of tomato paste.

Season with salt and pepper, turn off the heat and serve with a round of oil!
LEGUME SOUP should be enjoyed hot with a few slices of fresh bread, even better with some bruschetta!
