CUPCAKE OF SAN VALENTINO
INGREDIENTS FOR ABOUT 15 MUFFINS:
- 260 g of flour “0”,
- 10 g of baking,
- 125 g of granulated sugar,
- 150 g of whole eggs (about 3 eggs),
- 110 g of water,
- 117 g of seed oil,
- 2 apples,
- 100 g of sultanas,
- the juice of a lemon and its grated rind,
- 20 g of star anise,
- 30 ml of rum, ù

For mascarpone frosting:
- 250 g of mascarpone,
- 50 g of powdered sugar,
- 10 g of red liquid coloring.

Peel the apples, cut them into small pieces and place them in a bowl with water, lemon juice, star anise, raisins and rum. Leave it to rest for about half an hour.
In the meantime, beat the eggs with the sugar, slowly add the sifted flour, the baking and the grated lemon rind. In a separate bowl mix the liquids: 117 g of oil and 110 g of water.
Add the liquids to the egg mixture slowly, stirring and mixing well. Drain the apples and raisins and add to the mixture.
Mix everything and pour into muffin cups filling them for 3/4. Bake in preheated oven at 180 ° C for about 40 minutes. Remove from the oven and let it cool.
