CAKE OF APPLES AND SULTANAS

 

After a period of “rest” from the kitchen, you return to the stove with a CAKE OF APPLES!

We start the year always with promises to ourselves, in addition to good intentions I start this 2018 with good recipes!

The year just ended took me a lot: affections, points of reference and especially loved ones. It ‘been a year full of suffering, but it was also a year that gave me special moments, a year in which I grew a lot also in terms of work.

For this 2018 I have only one promise: the one I have to love myself more, think more about what really makes me feel good and get rid of all the ballast that create only suffering and bad mood.

And I do not know about you, but I, in front of a slice of CAKE OF APPLES, can not help but be happy!

CAKE OF APPLES

INGREDIENTS:

  • 1 kg of apples,
  • 200 g of sugar,
  • 2 eggs,
  • 1 sachet of instant yeast for cakes,
  • 200 ml of milk,
  • 180 g of sultanas,
  • 20 ml of Strega liqueur,
  • 250 g of semi-wholemeal flour (Antico Molino Santa Chiara),
  • a dozen of amaretti biscuits,
  • about 50 g of butter.

You will also need a 26 cm hinge mold.

 

METHOD :

Grease and sprinkle the hinged mold with the breadcrumbs and turn the oven on at 200 ° C.

In a bowl beat the eggs with 180 g of sugar, add the milk, baking powder and flour and mix well with the help of a whisk to avoid the formation of lumps.

Peel the apples, cut them into thin slices and keep aside. In a bowl, bring the raisins with cold water and rum.

Pour half of the mixture into the hinged mold. Place a layer of apple slices, a few crumbled macaroons and a handful of well-squeezed raisins. Sprinkle with a little sugar and repeat another 2 layers alternating apples, raisins, amaretti and sugar. Now pour half of the batter left and repeat another 3 layers to apples.

Cover with the remaining batter and finish with the last layers of apples until they run out.

Place a few knobs of butter on the surface of the cake and bake for about 1 hour, if you notice that the surface darkens too much cover with aluminum foil and continue cooking.

Turn off the oven, take it out of the oven and let it cool!
