INGREDIENTS FOR 4 PEOPLE :
- 1 kg of long aubergines,
- 50 g almonds with skin,
- 2 cloves of garlic,
- extra virgin olive oil,
- Salt and a pinch of chili,
- A bunch of basil.
Brush the eggplants with oil, put them on an oven baked plate and let it cook at 200 ° C for about 30 minutes.
Turn the eggplants over, let them cool and remove the skins that will come out easily.
From this pulp you get lots of strips that you will mix in a bowl with broken basil.
Meanwhile, grind the almonds and keep aside.
In a lightly oiled frying pan with crushed garlic cloves, add a pinch of chilli, salt and chopped almonds. Warm it up without frying the oil.
Now turn off the fire and pour the seasoning in the bowl with the aubergines, gently mix, flavor and serve at the table!
Tip: Good to taste warm, but very good even cold!
